Takayaki has been loved locally as a soul food for Fukuoka citizens.At Hakata Kawaya, the chicken skin is carefully wrapped and stabbed on a skewer to remove fat and add flavor, repeating the process for six days.Burning is done just before serving and baked crispy.The outside is crisp, the inside is dense, and you can taste the exquisite sauce that permeates the whole skewer
